This is the perfect weeknight side. Ready in under 10 minutes, it only has 6 ingredients (including salt and pepper) and is incredibly simple to make. The recipe is actually only two sentences – really can it get any easier than that?
If you want to add a little adventurous or have an extra 30 seconds, try adding some shaved Parmesan to top it off.
2 zucchinis, spiralized
2 tbs canola oil
1 cup cherry tomatoes
1 tsp garlic
Salt and pepper to taste
Special equipment: Spiralizer
Place all of the ingredients in a large skillet over medium heat. Sauté until the zucchini and garlic are soft and the tomatoes start to soften and burst, about 5 mins. Remove from heat and serve.
