Vanilla Honey Poached Pears

Sometimes you need a break from baked goods, but really, who wants to say goodbye to dessert completely? Poached Pears are one of my favourite dessert alternatives that don’t overload you with sweetness, but still deliver that satisfying end to a meal (or if you are a real dessert fan, who needs dinner?). This dessert brings out the bright sweetness of the Big Rock Honey Brown Lager. The beer helps to lighten the pears and compliments the vanilla and honey notes. A delicious pairing.

INGREDIENTS

4 cups water
2 tbs honey
2 vanilla beans
1/2 tsp lemon juice
4 bartlett pears, peeled

INSTRUCTIONS

In a medium saucepan, combine water, honey, vanilla beans and lemon juice. Bring to a simmer.

Slice a 1/2 inch off the bottom of the pear to create a flat bottom. Gently place pears on their side in the liquid, cover and simmer for 15-20 mins, or until pears are cooked but still slightly firm. Turn every 5 mins to ensure even flavour absorption. Remove the pears from the liquid and set aside.

Simmer the liquid over medium-high heat until reduced by half, about 15 mins.  Remove from heat. Serve each pear on a small plate, drizzled with 2-3 tbs of liquid.
