The Salad Formula

Want to know the secret to making a delicious, easy, basic salad? There is a formula! It’s honestly pretty simple: something green, something sweet (like fruit), something creamy (like cheese), something crunchy (like nuts), and a simple vinaigrette. Voila. Done. Tip for getting easy and fun vinaigrettes: buy flavoured vinegars (I love flavoured white or dark balsamic vinegars) and flavoured olive oils!

You can repeat this formula to make hundreds of versions of simple salads. Some of my favourites are:

  • Spinach, Grapefruit, Goat Cheese & Walnuts with a Lemongrass Mint White Balsamic and Herbed Olive oil.
  • Arugula, Fig, Goat Cheese & Pecans with Balsamic vinegar and a good olive oil.
  • Shaved brussels sprouts (use a mandolin – this one saves your fingers!), Cranberries, Shaved Parmesan and a Honey Dijon Vinaigrette.
  • Kale, Peach, Apricot, Goat Cheese & Pecans with Peach or Grapefruit White Balsamic and a good olive oil.
  • An Autumn Harvest Salad with Spinach, Apples, Roasted Butternut Squash, Cranberries, Goat Cheese & Pumpkin Seeds, with a classic Balsamic Vinaigrette.
  • A Beet Salad with Arugula, Beets, Oranges, Goat Cheese & Pistachios with a Mustard Vinaigrette.
  • A Fig & Arugula Salad with Arugula, Kale, Figs, Shallots, Prosciutto, Parmesan and some Balsamic Crema.
  • Arugula, Peaches, Parmesan & Pecans with a Apple Cider Vinaigrette.
  • and many more

So, for the formula:


Measure all ingredients with your heart:

Something green – a leafy green or shaved brussels sprouts
Something (or multiple things) sweet – like fruit, dried or fresh, or roasted squashes
Something creamy – like cheese
Something crunch – like nuts

there are two ways:

  • 2 parts oil to 1 vinegar
  • 2 parts oil, 1 part sweet and 1 part sour (balsamic vinegar, apple cider vinegar, white or red wine vinegar, lemon juice etc) – optional, add a small dollop of mustard as an emulsifier


Whisk together all ingredients of the vinaigrette. Layer all salad ingredients together and toss with your vinaigrette! That’s it!
