Thai Lettuce Wraps

Although this looks like a long list of ingredients, it is actually very easy to make and assemble. These simple lettuce wraps are healthy, delicious and an easy way to incorporate worldly foods into your diet. Taking less than an hour start to finish, its a great weeknight meal.
INGREDIENTS
3 cups vermicelli noodles, cooked
2 heads of butter lettuce, rinsed and dried
For the ground pork:
1kg ground pork
4 tbs Thai green curry paste (I use the Thai Kitchen brand)
2 tbs soy sauce
4 tsp golden brown sugar
1/2 tsp salt
2 tsp garlic, minced
For the slaw:
1/4 cup lime juice
1/4 cup rice vinegar
1/4 cup sugar
1 tbs fish sauce
2 tsp garlic, minced
4 cups broccoli slaw*
1 cup carrots, julienned**
1 english cucumber, julienned**
1/4 cup cilantro, chopped
1/4 cup basil, sliced in a chiffonade
1/4 cup mint, chopped
1/2 cup peanuts, chopped
*You can buy packages of pre-made slaw at your local grocer.
**It is easiest to chop these finely with a mandolin. They are excellent tools in chopping items finely and are inexpensive to buy.
INSTRUCTIONS
In a medium size bowl, combine all of the ingredients for the ground pork. Let sit for 1/2 hour to marinate.
Whisk the first five ingredients for the slaw in a small bowl to create the dressing. Meanwhile in a larger bowl toss the remaining ingredients and add the dressing until thoroughly coated. Set aside.
In a large saucepan over medium heat, saute the pork until fully cooked through with no pink left.
To assemble, layer a piece of lettuce with about 2 tbs noodles, 2 tbs ground pork and 2 tbs slaw mixture. Repeat until all lettuce wraps are assembled. Serve immediately.
