Sweet & Smoky Caramelized Cauliflower

Who doesn’t love the flavour of smokiness (like the kind you get from barbequing anything)? In this dish the smokiness of the smoked paprika and chipotle powder marry in perfect harmony with the sweetness of the honey and bright acidity of the lemon juice – with no barbeque required! You can make it as spicy or mild as you wish (with the chipotle, or even add some cayenne), but either way it will be full of flavour!

INGREDIENTS

2 tbs butter*
3 tbs olive oil
1 large head of cauliflower, cut into 1-inch florets
1 shallot, minced
2 tsp smoked sweet paprika
1 tbs honey
2 tsp lemon juice
1/2 tsp chipotle powder
Salt and pepper to taste

*To make vegan, substitute extra olive oil.

INSTRUCTIONS

Steam cauliflower until cooked, but still firm, in a large saucepan. Heat a large skillet with the butter and 2 tbs oil to high heat. Add cauliflower and cook a few mins a side, until slightly browned.

Add the remaining oil, the shallot, paprika and chipotle powder to the skillet and cook until shallot is softened. Add the honey, 2 tbs of water and sauté until the liquid becomes a glaze and coats the cauliflower, 2-3 mins. Pour the lemon juice over the cauliflower, and stir until combined.

Add salt and pepper to taste.

Serves 4
