Roasted Broccoli with Curried Yogurt

Sometimes you just need to mix things up. I tried this roasted broccoli and curried yogurt at a restaurant recently and was hooked. It’s not what you would traditionally think of for a side dish or starter, but it is absolutely delicious – and SO easy! 20 minutes and 4 ingredients. Not bad for something that feels luxurious for a Tuesday night!
INGREDIENTS
3 heads of broccoli, chopped into bite-sized pieces
3 tbs canola oil
2 tbs curry powder*
Salt and pepper to taste
Yogurt dipping sauce:
1/2 cup plain yogurt
2 tbs curry powder*
* I use the Epicure Mango Curry Powder. This one is a little spicy, a little sweet and has lots of flavour. Other curry powder will also work, but add amounts based on what tastes best. Try the yogurt before serving to assess.
INSTRUCTIONS
Preheat the oven to 400F.
In a large bowl, toss the broccoli with the canola oil. Add the curry, salt and pepper and toss to evenly coat.
Place the coated broccoli on a baking sheet. Evenly distribute the pieces over the sheet, trying not to crowd them. If they are too close together, they won’t brown, so distribute over two sheets.
Bake in the oven for 15-20 mins until the broccoli start to brown. Remove from the oven and put aside. Meanwhile, mix the yogurt and curry in a small bowl.
Serve the broccoli immediately with the yogurt.
