Pumpkin Spice Cookies

Fall is upon us! The leaves are changing, the weather is cooling and it’s time to break out those sweaters and scarves. To me, nothing says fall like anything pumpkin spice. So I decided to bring my love of pumpkin spiced everything into cookies! Turns out, after trying them on my coworkers, that I am not the only one who loves these little crowd favourites. They are easy and sure to please – just the way cookies should be.

INGREDIENTS

2 1/2 cups whole wheat flour
1 cup butter, softened
1/2 tsp baking powder
1/2 tsp baking soda
1 1/2 cups sugar
1/2 tsp salt
1 tbs vanilla
3 eggs
1 tbs cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp allspice

INSTRUCTIONS

Preheat the oven to 350F.

In a large bowl, beat the butter and sugar with an electric mixer fitted with the paddle attachment. Beat on medium-high speed until fluffy and light yellow in colour, about 5 minutes.  Reduce speed to low and add the salt, spices, and vanilla. Mix until incorporated. Beat in eggs one at a time until fully combined. Add half of the flour, baking soda and baking powder; mix until just combined. Mix in remaining flour until batter is smooth.

On a baking sheets lined with parchment paper, drop 2 tbs-sized balls of dough about 2 inches apart.

Bake until the cookies are golden brown around the edges and slightly soft in the middle, about 10-15 mins. Remove from the oven and place on wire rack until cooled completely. Store cookies in airtight container for up to a week.

    Hello!

    I just have to say these are by far the best cookies I’ve ever had. I’m not a big sweets person so these are great for me–they are the perfect balance of sweetness. Perfect for fall and just so yummy. All I need now is a latte to dip them in! Mmm…
