Pork Tenderloin with Sauteed Apples

Wanting a little something to spice up a weeknight meal? Try adding a little sauce to it! It is amazing what dumping a few ingredients into a pot and sauteing them for a few minutes can do. That is exactly what we’ve done here with our Pork Tenderloin with Sauteed Apples. Simple, easy and 20 mins start to finish (that includes the time it takes to cook the pork!).
INGREDIENTS
2 pork tenderloins
1 gala apple, diced
2 tbs grainy mustard
2 cups chicken stock
1/4 cup dry white wine (optional)
1 tsp savory
1 tsp thyme
1/2 tsp tarragon
INSTRUCTIONS
Preheat the oven to 400F. Cover the pork in your favourite rub (or just salt and pepper if that’s your style) and place on a baking sheet. Bake for approximately 20 mins or until the center temperature reaches 130F.
Meanwhile, saute the remaining ingredients in a small shallow pan over medium heat. Simmer until the sauce is reduced by 3/4.
Once the pork is done, remove and cover. Let rest for 5 min before slicing. Serve a spoonful of sauce over the slices of pork.
