If you love nuts, cheese and basil, you obviously love pesto as much as I do. Although it seems like a daunting task, it is actually incredibly easy to make! All you need is a food processor or blender and you are set to make your own pesto to enjoy in whatever dish you like.


1 cup pine nuts
1 cup parmesan
1 tsp garlic
3 tbs olive oil + 1 tbs lemon juice
8 cups basil


In a food processor (or blender), combine the pine nuts, parmesan, and garlic. Blend roughly so it’s broken into smaller chunks. Add the basil, and slowly add the oil and lemon juice as you are blending the basil, blend until smooth. Make sure you scrape down the bowl periodically to ensure consistency in the mixture. Pesto can be made a day ahead.

Add to whatever dish you usually enjoy with pesto!

Makes approximately 1.5 – 2 cups of pesto.
