Goat Cheese & Sauteed Pear Crostini

Another Momma & Poppa Powell creation. This one was something we made up at Christmas. We started with the cheese and pears, and then adding toppings until we were satisfied with the taste. Sometimes the best creations come from having no plan at all. With having a crostini base, you can top it with almost anything. If you find something you love, let me know!

INGREDIENTS

1 fresh baguette
5 pears, peeled, cored and thinly sliced
5 oz goat cheese, softened
2 tbs butter
Zest of 1 lemon
Balsamic crema*

*A thickened balsamic glaze that can be found at some large chain grocers, such as Safeway and Italian specialty grocers. This can also be created by reducing balsamic vinegar.

INSTRUCTIONS

Place oven on broil. Cut the baguette into diagonal 1/2 inch slices. Arrange slices on baking sheet and toast in oven. Watch carefully so they don’t burn. Flip slices once lightly toasted on top (pale brown in colour) to toast the other side.

In  large skillet, melt 2 tbs butter on medium heat. Add the pears and sauté, stirring occasionally, until soft and slightly browned, remove from heat.

Spread about 1 tsp of goat cheese on each toast. Top with a few slices of pear and a drizzle of balsamic crema. Finish with a sprinkle of lemon zest and serve.
