Enjoying the last fleeting days of warmth and summer peaches, we wanted to put them together into something delicious and simple. Say hello to the Peach Mozzarella Salad.
As simple as it sounds, this salad has 5 ingredients – and two of them are balsamic creama and olive oil. Finished in about 5 minutes, and full of freshness, this is definitely turning into one of our summer faves.
about 100g fresh mozzarella
2 cups fresh basil
1 tbs olive oil
1 tbs balsamic crema (optional)
Salt & pepper to taste
Slice the peach into thin slices. Count how many slices there are and then slice an equal amount of slices of mozzarella – thinly sliced.
Start to layer on a platter with peach, mozzarella, basil (one large leaf or two small), repeat until you run out of ingredients. Slice any remaining basil in a chiffonade and sprinkle on top.
Drizzle with olive oil and balsamic crema to finish. Serve immediately.
