Panna Cotta

What is better for celebrating Valentine’s Day than with dessert? Panna Cotta is one of my favourite desserts, as it is so easy and so delicious! Plus, with chocolate and raspberries you can’t go wrong! So spoil your special someone (or someones) with this easy and impressive dessert.
INGREDIENTS
1 envelope unflavoured gelatin (about 1 tbs)
2 tbs cold water
3 cups heavy cream, chilled
1/2 cup sugar
1 1/2 tsp vanilla
Cocoa for dusting
Raspberries for plating
Special equipment: 6 6-oz ramekins
INSTRUCTIONS
In a small saucepan, sprinkle gelatin over water and let stand about 1 min to soften. Heat gelatin mixture over low heat until gelatin is dissolved. Remove from heat.
Meanwhile, bring cream and sugar just to a boil over medium high heat, stirring often. Remove from heat and stir in gelatin mixture and vanilla. Divide amongst the ramekins and cool to room temperature. Chill ramekins in the fridge overnight.
To remove, dip ramekins in hot water for 3 seconds, and invert onto centre of small plate. Dust with cocoa and place a few raspberries on top.
Serves 6
