Orange and Watercress Salad

This salad came from my go-to recipes for salads: some lettuce, something sweet, something nutty and assorted vegetables. The ingredients vary from week to week, depending on what is in my fridge, but the formula stays the same. I usually mix up my vinaigrette from time to time as well, but this one has stolen my heart – I am OBSESSED! I love the tangy-sweetness of pomegranate molasses and it is so perfect on this delicious salad.
INGREDIENTS
5 cups watercress, chopped
2 oranges, chopped
1/2 zucchini, chopped
1/2 cup sliced almonds
1/4 cup dried currants*
1 cup mint, chopped
For the dressing:
1/4 cup olive oil
2 tbs pomegranate molasses
1 tsp lemon juice
1 tsp cracked black pepper
*This can be substituted for other dried fruit if you wish. Try mixing it up with dried figs!
INSTRUCTIONS
Place of the salad ingredients in a large bowl and toss. In another small bowl, whisk together the ingredients for dressing and drizzle over the salad. Toss until coated.
Serve immediately.
