Orange Citrus Salad

Here is to thinking positive thoughts for good, warm weather! I do not know where my mother found the recipe, but it is delicious! It is so light, and a perfect light lunch for a hot spring or summer day. You can mix it up with switching up figs for dates (fresh or dried) or throw in some of your favourite nuts!

INGREDIENTS

For the salad:
1 orange
Handful of figs (dried or fresh)
Fresh mint, thinly sliced in a chiffonade
1 tbs slivered almonds, optional

For the dressing:
¼ cup fresh orange juice
2 tbs fresh lemon juice
2 tsp grated orange zest
2 tbs olive oil
2 tbs canola oil
2 tsp Dijon mustard
½ tsp dried tarragon
1 shallot, chopped
Salt and pepper, to taste

INSTRUCTIONS

Peel the orange and cut crosswise into 1/4 inch rounds (do not cut into segments). Cut the tops off the figs. Cut the figs crosswise into small rounds.

Organize the wheels of oranges overlapping, then layer figs, almonds and mint on top.

Mix all the ingredients together in a small bowl and whisk until incorporated.

Drizzle plated salads with dressing and serve.
