Kale Caesar Salad

Stampede is over and after all of those mini-donuts, beers, beef on a bun, pulled pork, turkey legs, fried pickles and anything you can put on a stick  (not to mention a lot of tums), you are probably thinking eating a little lighter might make you feel better and help you see your feet again. Well, I can help shed that extra stampede weight with a delicious Caesar Salad!

Yes, you read that right, I said caesar salad. Normally these salads aren’t very good for you, however Vitality Fitness (the gym I go to) has made a way to make it healthy, AND make kale taste delicious (who knew that was possible). If this can make me eat raw kale, it will make you a believer too.

INGREDIENTS

6 cups kale, rinsed and hand-torn

For the dressing:
1 cup plain greek yogurt
1/4 cup shredded parmesan
3 tbs garlic, chopped
1 tsp canola oil
1 tsp lemon juice
Salt and pepper to taste

You can also top this salad with other vegetables to add more interest, such as halved cherry tomatoes or sautéed red pepper slices.

INSTRUCTIONS

Heat the oil in a small saucepan over medium heat and sauté the garlic until it begins to turn golden brown. Immediately remove from heat.

Combine the remaining ingredients for the dressing with the sautéed garlic in a small blender (something like a magic bullet works well here). Pulse for 20 secs to combine. Test the dressing and add salt and pepper to taste.

Place torn kale in a large bowl and drizzle with the dressing. Toss to fully coat the kale. To enhance the flavours toss the salad into the fridge to cool for 10-15 mins. Remove from the fridge and top with any additional toppings of your choice and more shredded parmesan.

Serves 3-4
