Brady’s Honey with Lemon and Ginger

I am sure you have been sick at least once this winter, or know someone who has been. With vicious colds going around, I thought I would share my recipe for my Honey with Lemon and Ginger. This has been a huge hit (1 kg jar was gone in one day!) at my office and is a great help for those dealing with colds – especially sore throats.
INGREDIENTS
About 1kg liquid honey
2 tbs minced ginger* (you can buy it in a jar or mince it fresh)
2 large lemons
*You can adjust the amount of ginger depending on your taste.
INSTRUCTIONS
Slice the lemon widthwise into thin slices about 1/4 inch thick. Meanwhile, fill a large jar (I use a large mason jar) with honey. Ensure to leave enough room at the top for the lemons. Add the ginger to the honey and stir to evenly distribute. Add the lemons and stir.
Let sit for an hour before using to enable the lemon juice to mix with the honey. To drink place 2-3 tbs of the honey mixture in hot water or tea. Adjust to taste.
