High Protein Egg Bites
These delicious high protein egg bites are easy to make and versatile. You can put any toppings you like in the mix – be it veggies or bacon or potatoes – and you can adapt the seasoning to whatever you would like. This way, you get the protein focused breakfast you’re looking for, without the same meal every week. Simple and easy, and great meal prep.
INGREDIENTS
12 eggs
500g cottage cheese
1/2 cup ultra-filtered milk (regular works too – ultrafiltered has more protein)
2 cups diced potatoes
1 pepper, diced
1 onion, diced
1 cup diced mushrooms
1-2 tbs seasoning of your choosing
Splash of oil
INSTRUCTIONS
Preheat the oven to 375F. In a large skillet, sauté the potatoes and onions in oil until soft. Once soft, add the peppers and mushrooms. Sauté again until soft and add the seasoning – my favourite is a smoked paprika based one, but you can make this into any flavour you want (greek, smoky, italian, etc). If you don’t like these veggies, you can also add whatever you like – even bacon! Just make sure they are cooked before hand.
Spray your muffin tins and divide up the mixture amongst the two muffin tin trays (making 24 egg bites). I like to use the silicone ones, because they stick less.
In a medium bowl, mix the eggs, cottage cheese and milk. Once combined – divide amongst the muffin tins. Mix each egg bite up a little and then pop it in the oven. Cook for 20-30 mins or until a toothpick comes out clean and the egg is cooked.
Let them cool before you dig in – they will be hot! These make easy meal prep for the week and have 10 grams of protein per 147 calories per egg cup.
Makes 24 egg cups
