It’s September again (where did the summer go?!), so it’s back to the grind again. Getting back into the swing of things means I have less time for breakfast in the morning, but cereal gets old pretty quickly. This recipe is super easy, and is a nice take on oatmeal. The creaminess makes it feel like a comfort food, without leaving you with the heavy feeling.
1 cup quick oats
2 cups milk*
1 tbs cinnamon
1/4 cup maple syrup
1 cup assorted berries
*To make vegan, substitute almond milk.
In a medium saucepan, bring oats, milk and cinnamon to a rolling boil over medium heat.
Reduce heat and simmer until mixture is thick and creamy, about 5 mins. Remove from heat, mix in the maple syrup and serve topped with your favourite berries.
