Cranberry Apricot Nut Loaf

Because sometimes, you just need something a little sweet to snack on. Serve this loaf with butter, a fruit spread, beer, wine, or beer. Yes I said beer twice. Am I wrong?

INGREDIENTS

2 cups flour
3/4 cup sugar
3/4 tsp salt
1 1/2 baking powder
1/2 tsp baking soda
2/3 cup dried cranberries
1/3 cup dried apricots, chopped
1/2 cup sliced almonds
2 eggs
3 tbs vegetable oil
1 cup Big Rock Belly Flop (find it here)
Zest of 1 orange

INSTRUCTIONS

Preheat the oven to 350F.

Line a loaf pan with parchment paper. Set aside.

In a large bowl, mix together the flour, sugar, salt, baking powder, baking soda, cranberries, apricots and almonds. In a separate bowl, combine the eggs, oil, beer and orange zest. Add the liquid ingredients to the dry ingredients and combine until thoroughly mixed.

Pour the batter into the loaf pan and bake for 50 mins to 1 hour or until you can insert a a tooth pick into the middle of the loaf and it comes out clean.

Serves 6-8
