Cilantro Shrimp Salad

Almost everyone makes the new years resolution to eat healthier. This delicious salad is easy to create with vegetables that are available year-round. This versatile salad can have many other delicious veggies added to your tastes, like broccoli, green beans and cauliflower.
INGREDIENTS
For the salad:
400g cooked shrimp, chopped
2 cups snow peas, chopped
1 orange pepper, chopped
1 yellow pepper, chopped
1 avocado, chopped
3 stalks of celery, chopped
For the dressing:
2 cups cilantro
1 cup parsley
2 tbs red wine vinegar
3 tbs lime juice
2 tbs garlic
1/4 cup honey
1/2 cup canola oil
INSTRUCTIONS
Combine all of the ingredients for the salad in a large bowl. In a food processor or a blender, combine the first 6 ingredients of the dressing. Pulse for a few seconds until finely chopped. Continue to blend and slowly add the oil until mixture is smooth. Add the dressing to the chopped salad and mix to coat. Serve immediately.
