Berry Crisp

Crisp is one of all my favourite desserts, and the best part is how easy it is! It can literally be done with whatever fruit you have on hand (my favourite is berries) and easily whipped up for any last minute dessert (or comfort food) crisis you might have.

INGREDIENTS

For the filling:
Your favourite fruit or berries, cut into small bite-sized portions*
Lemon juice
Lemon zest (optional)
Sugar (optional)

For the topping:
Equal parts of flour, brown sugar, oats and melted butter**

*Frozen berries work great for this recipe. Just remember to defrost them and discard the juices before using in the recipe.

**To make gluten free have equal parts oats, sugar and butter. To make vegan, substitute the butter for canola oil.

INSTRUCTIONS

Preheat oven to 350F.

In a large bowl mix enough fruit to fill your baking dish (my favourite is a 9×9 in glass baking dish) 3/4 of the way up the edge. Add approximately 1 tsp lemon juice (or less if your dish is smaller than the 9×9 dish), and the amount of lemon zest you desire. This will depend on how much you like lemon. Add sugar if desired to sweeten it – I usually omit this, as I find that the fruit is sweet enough. Pour fruit into baking dish.

To make the topping, mix the topping ingredients together. Usually 1 cup of each is a good place to start, but you will need to increase or decrease the amount based on the size of your dish. Once combined, sprinkle on top of your fruit filling. Make sure to cover all of the fruit.

Bake for approximately 25 mins or until the fruit inside is soft and the topping is crispy.

Let cool slightly and serve with vanilla ice cream.
