Baked Brie

Two recipes in one! How lucky is that? One sweet and one savoury – for whatever your mood is. There are a million ways to do baked brie, but these two recipes are my go-tos. As a cheese lover (but seriously, I usually have at least 4 types of cheese in my fridge at all times), I love to cook with cheese – and baked brie is one of my favourite recipes. So easy, and always a crowd pleaser, this is the perfect appy to blow your friends away at your next dinner party (not to mention it is absolutely delicious).
INGREDIENTS
7 oz wheel of brie
Crackers or bread of your choice (you can use gluten free crackers too)
For the Brandied Nut topping:
1/4 cup brown sugar
1/4 cup pecans, chopped
1 tbs brandy
For the Garlic, Onion and Pepper topping:
1/2 onion, diced
1/2 red pepper, diced
2 garlic cloves, diced
1 tbs olive oil
INSTRUCTIONS
Preheat the oven to 400F. Place brie wheel on a glass oven proof rimmed dish.
For the garlic, onion and pepper: pile the garlic, onions and peppers on the brie and drizzle with olive oil.
Heat in oven until brie is soft and slightly melted, about 10 mins.
For the brandied nuts: mix together in a small bowl. Set aside.
Heat brie in oven for 5 mins until soft. Pile nut mixture on top of brie and return to the oven. Heat until brie is soft, slightly melted, and sugar is completely melted, about another 5 mins.
Serve with sliced baguette or assorted crackers.
