Bacon Wrapped Corn with Smoked Paprika

For everyone kicking off camping season this weekend, here is an easy side that works great on the barbecue. And it has bacon, who doesn’t love bacon?! (sorry for all you vegetarians/vegans out there)

This can easily be done on the barbecue or in the oven.

INGREDIENTS

8 ears corn
16 bacon strips
Smoked paprika

INSTRUCTIONS

Preheat oven to 350F or the barbecue to medium.

Lay bacon out on flat surface and sprinkle one side with smoked paprika. Wrap the corn with the bacon, with the paprika side touching the corn. Wrap each ear of corn tightly with tin foil. Make sure you securely wrap it so that the fat of the bacon won’t leak out.

Place on baking sheet (in the oven, omit this for the barbecue). Cook for 10 mins and turn the corn a 1/4 turn, repeat with the remaining three sides (approximately 40 mins total). Cook until corn is soft and bacon is fully cooked. For the BBQ rotate corn 1/4 turn every 5 mins, to ensure even cooking.
