Apple Crisp

It’s apple season! And we have a ton of them. So, the logical answer is to make Apple Crisp! Mike is OBSESSED with crisp (he loves dessert) – it is quite likely his absolute favourite food ever. Plus it’s so easy, that how can we resist.
We like to save some for winter, so we freeze them before they are baked to save for later (and ensure we get that crispy top!). Plus, they’re great to share with family and friends!
INGREDIENTS
For the filling:
4-5 cups apples, thinly sliced (you can leave the skins on)*
1 tbs lemon juice
2 tbs flour
1 tsp cinnamon
1/2 tsp nutmeg
*If your dish is bigger, increase the portion of apples and other ingredients to fill the space you need.
For the topping:
1/2 cup flour
1/2 cup brown sugar
1/2 cup oats
1/2 cup melted butter**
**To make gluten free have equal parts oats, sugar and butter. To make vegan, substitute the canola oil for the butter.
INSTRUCTIONS
Preheat oven to 350F.
In a large bowl mix enough fruit to fill your baking dish 3/4 of the way up the edge. I use a 9×9 baking dish for making to eat immediately, and little tinfoil loaf pans (make sure you get the ones with the lids) to freeze for later (makes it easy to share with family and friends!).
Add the lemon juice and toss. Add the flour and spices and mix to evenly coat the fruit. The flour will help to absorb some of the juices. Pour fruit into baking dish.
To make the topping, mix the topping ingredients together. You can increase or decrease the amount based on the size of your dish – just keep the proportions even. Once combined, sprinkle on top of your fruit filling. Make sure to cover all of the fruit.
If you’re freezing, cover with the lid and place in the freezer. Remove from the freezer and defrost once you’re ready to enjoy it.
Bake for approximately 25 mins or until the fruit inside is soft and the topping is crispy.
Let cool slightly and serve with vanilla ice cream.
Serves 4-6 (depending on size of dish)
