This dessert is one that we have made for years in my family. It is so simple that it was the first dessert I ever helped my family with. A perfect dessert to have children help with.
1 pkg Mr. Christie chocolate wafers
1L heavy cream, chilled
1 tbs vanilla
3 tbs powdered sugar
In a large bowl, or stand mixer, beat the cream, powdered sugar and vanilla until soft peaks form. Spoon 1 tbs of the whipped cream onto a each chocolate wafer and layer together in a line to create the shape of a log. Cover the cookie log in the remaining whipped cream. Top with shaved chocolate or sprinkles if desired.
Cover and place in the fridge for a minimum of 3 hours to allow the cookies to soften. This can be made the day ahead.
Cut into 1/2 inch slices and serve.
