A stampede favourite, cornbread is a traditional southern side. Growing up with Grandparents who owned a ranch in Washington State, I remember this classic quick-bread fondly at our cowboy-themed meals. To this day it is still one of my favourite comfort foods.


1/2 cup cornmeal
1 cup flour
1 cup milk
1 tbs baking powder
1 tsp salt
1 tsp ground pepper
2 eggs
1/3 cup honey
2 tbs sugar
1/4 cup canola oil
butter to grease pan


Preheat oven to 350F.

Using a paper towel, grease 9×9 baking dish all over with the butter. In a medium bowl, combine all remaining ingredients. Whisk until smooth and pour into prepared pan.

Bake for 20-30 mins or until a toothpick inserted into the centre comes out clean. Set aside to let cool to workable temperature. Serve warm with butter.
